Amazing Cashew Mylk Recipe!

Happy Friday friends! Fun fact about me: a few years ago, I made nut mylks from scratch for about 6 months instead of buying any from the store. I was making primarily almond mylk, but ya know… you gotta switch it up sometimes right? Not gonna lie though, I kept it pretty basic, meaning: raw nuts, no flavoring, no sweetener. Which was fine, but the cost/ time / “nothing special” taste of the homemade mylk just wasn’t enough for me to keep making it. Since then, I’ve been buying almond mylk from the store. BUT (game changer alert!!) this past weekend, I decided to make some cashew mylk a lil’ differently, just for the heck of it. And you guys!! I am sold on this stuff!! It’s so easy, delicious and healthy (and no preservatives woot woot!). So, of course, I had to write a post about it so you can try it too. Ok here’s how you make it:

Ingredients:

  • 1 heaping cup raw cashews
  • 4 cups filtered water
  • 2 pitted dates
  • 1/2 tsp vanilla bean powder

Directions:

  1. Lightly toast cashews in skillet over medium- low heat, tossing occasionally, until they begin to brown. This step is optional, if you’d rather use completely raw cashews, but I am telling you it is so soooooo good with toasted cashews. Just sayin’.
  2. Soak toasted cashews in 4 cups of water for 5 hours.
  3. Blend cashews, water, dates and vanilla bean powder in a high speed blender until smooth.
  4. Using a nut mylk bag , strain mylk in small batches, discard solids and repeat. I’ve found it easier and less messy to strain about a cup at a time. This is another step you can absolutely skip, especially if you want your mylk extra thick and creamy.
  5. Store in airtight container and enjoy for 5 – 7 days!

I could not believe how amazing this tastes! And omigosh it is oh so creamy! I’ve been using this in oatmeal, smoothies, tea and even my coffee (which is saying something cuz i’m usually pretty adamant about using half and half or milk with coffee). 100%, definitely, for sure I’ll be making this more often.
