Happy Wednesday guys! Do you love breakfast?? Breakfast is seriously one of my favorites!! And it’s not just because I’m a morning person lol. I always feel so ready to take on the day after a breakfast that’s healthy and delicious. And that’s what I’ve got here for you today. Overnight oats are so great and if you haven’t tried some variation of them at this point, where have you been 😉?? I’m always looking for ways to change up my breakfast even if it’s as simple as adding or taking away an ingredient or two. Sometimes, such a small change makes a meal taste completely different. And I’m not the type of person that’s satisfied having the same breakfast every single day, so coming up with new variations of things is just a part of my weekly routine.
Ok anyway, overnight oats: they’re healthy, fast and easy!! I love to make them during the summertime when its too hot for hot oatmeal (and if it sounds odd to eat cold oatmeal, you’ve gotta just try it. You might be surprised). They’re also great if you need a grab-and-go breakfast. I usually make them the night before I work out, so I don’t have to spend extra time cooking breakfast after I’ve done my workout and showered. If you want to give this goodness a try (and you totally should!) here’s the recipe:
Ingredients:
- 1 cup unsweetened almond milk
- ½ cup rolled oats
- ¼ cup Kite Hill almond milk yogurt
- ½ of a medium carrot, grated
- 1 tbsp chia seeds
- 1 tbsp maple syrup
- ¼ tsp pumpkin pie spice
- Dash cinnamon
Combine all ingredients in a jar and stir until well combined. Place in the fridge overnight, wake up and enjoy! You can also heat this up in the microwave or on the stove top in the morning if you prefer warm oatmeal.
I swear this tastes like carrot cake (hence the title lol) and I love the fresh element that the carrots add too. Also, I’m not vegan, but I really love this with almond milk yogurt, so I would definitely give that a try even if you normally buy regular yogurt. I found the brand Kite Hill at Sprouts!
